Color Me Vegan
In a food processor or blender, combine the peas, cumin, onion, garlic, 2 tablespoons of the lemon juice, and red pepper flakes and blend until smooth. Taste, add salt, and adjust seasonings as necessary, adding more lemon juice if necessary and more red pepper flakes, if desired.
Blend for a few more seconds and then transfer to a serving bowl. Stir in the chopped tomatoes and garnish with cilantro. Serve with tortilla chips, crackers, or fresh veggies.
