1 In a large skillet, heat 1 tsp oil over medium high heat.
2 Add apples and onion and cook until soft (4 min)
3 Stir together sweet potatoes and cooked apple mixture and cook for 5 - 10 min
4 In a separate skillet, add 1 tbs oil.
5 Spread 1/2 cup of the mixture in an even layer and press down with a spatula
6 cook until golden brown on the bottom (5 min)
7 Drizzle with remaining oil and flip the potatoes
8 Cook for about 5 more minutes
9 Sprinkle with cinnamon and salt and pepper to taste.
