Suggest a better descriptionBring a saucepan of lightly salted water to the boil, add the diced sweet potato and simmer for 10 minutes, until just tender. Drain. Heat the butter and oil in a frying pan. Add the cajun seasoning, onions, courgettes and pepper and cook stirring occasionally for 2-3 minutes. Stir in the sweet potato and chicken and cook for a further 5-6 minutes, until golden. Transfer to a warmed serivng plate and sprinkle over the cheese. NOTES : A cajun spiced recipe with dried sweet potatoes and chicken.
