This is the recipe Shirley made for Thanksgiving every year.
Boil sweet potatoes 20 minutes. Cool. Skin and slice. Peel, core and slice apples. In a buttered casserole dish, alternately layer sweet potatoes and apples ending with sweet potatoes. Combine sugar and cornstarch in a saucepan. Mix in water, butter, lemon juice,and salt. Stir and bring to a boil for 1 minute. Pour over casserole. Bake at 375 for 1 hour.
