Hearty stew that goes great over rice
Prep:
Dice onion. Thinly slice half the jalapeno into rounds (to top finished stew). Finely chop remaining jalapeno -remove ribs and seeds for less heat. Peel and finely chop garlic. Dice sweet potato
Heat large drizzle of oil over medium-high heat. Add onion and chopped jalapeno. Season with salt and pepper. Cook until softened (about 5 to 7 minutes)
Add sweet potato to pot and season with more salt and pepper. Cook stirring until lightly browned (4 to 6 minutes). Add garlice and Southwest Spice. Cook, stirring until fragrant about 30 -60 seconds
Stir in tomato pate and Tex-Mes paste (I used more tomato paste). Cook until slightly darkend and combined 1 -2 minutes. Stir in beans with liquid, broth, and 1 cup water. Bring to simmer and cook until thickened about 15 minutes.
Serve over rice with cheese, sour cream, sliced jalapeno and any other topping of choice.
I made jar of Southwest Seasoning using following recipe…..
2 tbls chili powder
1 tbl cumin
1 tbls smoked paprika
1 tbls reg paptika
1 tbls garlic powder
1 tbl oregano
1 tbl kosher salt
2 tsp ground coriander
2 tsp onion powder
2 tsp turmeric
1 tsp black pepper
1 tsp gayenne pepper
