These are great Paleo buns for burgers, sandwiches, etc.
Preheat oven to 350*. Peel and cube 2 large, 3 small sweet potatoes and boil until soft.
In a separate dish, combine flax and warm/hot water, set aside.
When potatoes are soft, drain and mash. Add palm oil, lemon juice and flax "egg" and mix together by hand. Stir in dry ingredients by hand.
Spread dough into roll shapes on a pan lined with parchment paper. Bake for 20 -25 minutes.
The lemon juice/vinegar is to activate the baking soda, it is best to bake this in one batch for optimum rise.
