Preheat oven to 400 - 425 degrees.
Microwave sweet potatoes for 3-5 minutes until somewhat soft. This is basically to give them a jump start on being done.
Season brussels sprouts with olive oil, salt, and pepper. Put into oven for 10-15 minutes, until somewhat blackened.
Put sweet potatoes in oven below brussels sprouts. The should be removed when they start to be blackened, maybe after 7 minutes.
Combine spouts, potatoes and cover with cheese and dressing.
