Smooth sweet potatoes with a rum flavor topped with a pecan and brown sugar topping
Preheat oven to 350 degrees. Spray a 9X13 baking pan with cooking spray. Peel and boil sweet potatoes until soft and mash.
In a large bowl, mix the sweet potatoes and sugar. Stir in the eggs. Mix in cream, vanilla and 1/2 cup melted butter. Gradually stir in the rum until well blended. Transfer the mixture to the baking dish.
In a medium bowl, mix the brown sugar, pecans and flour and a 1/3 cup melted butter. Sprinkle over the sweet potato mixture.
Bake 30 minutes in oven. Allow to sit 10 minutes before serving.
Don't used canned sweet potatoes.
