Sweet potato casserole from my head

scrub, fork, and foil sweet potatoes. bake at 375 an hour, or until soft.
When cool enough to touch, open up potatoes and scoop out flesh and put into a large bowl. While potato meat is still hot, add the butter/ghee, lots of it. add cinnamon, syrup (also can use brown sugar, etc.) and mix well.
can sit in large bowl in fridge over night.
put the potato mixture into 2 pans (I usually use my round and square stones). put chopped pecans in one.
Top with marshmallows, as desired.
bake at 375 for 45 minutes.
