Peel potatoes and chop into large chunks. Place saucepan and cover with cold water. Bring to boil, then reduce heat and simmer until fork-tender, about 25 minutes. Drain and let stand about 5 minutes.
Mash until they are smooth and add remaining ingredients. Mix until blended.
Shape into patties. Line baking sheet with paper towels. Fry patties over medium high heat in skillet batches, about 3 minutes per side. Transfer to sheet to cool. Keep in over at 200 until ready to serve.
