Preheat oven to 350 degrees.
Mash sweet potatoes in large mixing bowl.
Add eggs, granulated sugar, brown sugar, vanilla, spices and evaporated milk to sweet potatoes..
Beat mixture well until creamy.
Beat in crushed pineapple.
Pour into prepared, unbaked pie crust.
Bake for 50-60 minutes or until done (pie will be almost firm when done). If necessary, cover crust with tin-foil in last few minutes of baking to prevent burning.
Top with real whipped cream, sweetened with a little powdered sugar plus some vanilla for a richer taste.
