Cook quinoa per instructions on the box.
Cook onion and peppers until tender.
Preheat oven to 350 degrees.
Mix quinoa, beans, sweet potatoes, 1/2 cup cheddar cheese and seasoning together.
Mix egg whites and salsa together.
Combine bean mix and salsa mix and put into a casserole dish with non-stick spray.
Top with the rest of the cheese.
Bake approximately 45 minutes or until set.
