Bake sweet potato til tender. Carmalize onions, add minced garlic last. Peel potato, cube and add to soup pot with onions. Warm chicken broth. Add to pot along with rest of ingredients. Using an immersion blender, carefully blend. Adjust seasonings as needed. May need to warm.
