Suggest a better descriptionPeel and dice your sweet potatoes into 1/2 inch cubes. In a small bowl, combine the sweet potatoes with 1 tbsp olive oil and seasonings of your choice (I used paprika, sea salt & garlic powder) then air fry them at 400 for 10-12 min, tossing them halfway. Alternatively you could roast them in the oven at 425 for about 30 min, also tossing them halfway. Cook the corn according to the package directions, rinse and drain the beans. Heat up your tortillas and assemble the tacos with the roasted sweet potatoes, beans, corn and then top them with the cotija cheese that comes with the corn, add avocado, serve and enjoy!
