Sweet potatoes
Preheat oven to 400 degrees. Peel sweet potatoes. Chop lengthwise in half. Chop halves in half. Bring a pot to boil. Place sweet potato wedges in boiling water with tongs. Let boil approx 5 minutes or until you grab with tongs and feel a little softness. Do not boil too long. If its very soft it will be difficult to grab with tongs and they will fall apart when coming out of pot. Line baking sheet with foil. Spray foil with Extra Virgin Olive Oil. Place wedges on foil. Either spray or sprinkle 1 tblsp olive oil on top of wedges. Sprinkle pinch of salt and add as much pepper, red chile power and cinnamon to taste. Bake for 30 minutes. This is my favorite thing in the world! This would yield 2 servings.
