Preheat oven to 425. Mix the oil, cumin, oregano, coriander, salt, parsley and pepper into a large bowl. Cut the sweet potatoes into fries and mix them with the marinade. Spread over crumpled foil on a cookie sheet. Bake for 15 minutes and check so that they don't get mushy. Broil if you need. Serve immediately. You can make the sauce ahead of time and put in the fridge. Mix all the remaining ingredients for the dipping sauce.
