Peel and slice into 1 inch pieces:
1 Sweet Potato for 2 people
Mix in a small pot and slowly boil until sugar is dissolved. Stir from bottom with a spatula not a spoon.
1 ½ Cups Brown Sugar
1 Stick Margarine or Butter
Pecans (optional)
Put potatoes in an appropriate size greased pyrex flat casserole.
Pour brown sugar mixture over potatoes.
Sprinkle with chopped pecans if desired.
Heat until bubbly in a 350° oven. DO NOT COVER WITH FOIL – The syrup will become watery.
