Oven to 400. Line large rimmed baking sheet w/ parchment paper
Prick potatoes in 3- 4 spots w/ fork. Rub w/ oil. place in baking sheet. Roast till tender- 45 min to 1 hour. Let stand till cool enough to handle.
Increase oven to 450.
Slice ea potato in half. scoop[ flesh in lg bowl- leave a generous 1/4 in border in the skins. Place 12 of the pretties skins on baking sheet. discard remaining 4.
Add 1/4 cup cheese, sour cream, syrup, salt, pepper, nutmeg to the potato flesh. Mash w/ masher till smooth. Divide filling among skins. Top ea w/ remaining cheese.
Bake till bubbling- 20-25 min.
