Sweet Potato

Stir Coffee, Maple Syrup, Sugar and espresso powder in a medium saucepan over med-high heat until sugar dissolves. Bring mixture to boil, cook until thickened and reduce by half. Remove mixture from the heat and add the bourbon and 2 tablespoons of butter place back on medium heat and simmer mixture until reduce until to ¾ cup (40-45 min) season with salt and pepper.
Arrange racks in upper and lower third of oven, preheat oven to 425
Melt remaining 7 tablespoons of butter in small sauce pan, pour into large mixing bowl add sweet potatoes. oil and seasons with salt and pepper. Divide onto two large cookies sheets and roast in oven. Turning potatoes often and rotation sheets in oven until potatoes and tender and start turning golden brown(30-40min)
Transfer Potatoes to serving platter, drizzle warm sauce mixture over potatoes and sprinkle with almonds...Serve
