Wash Sweet potatoes with a scrub brush
Pierce about five times with a fork
Place on foil or parchment-lined sheet pan
Bake sweet potatoes @ 400 degrees until tender with a fork, about an hour
When potatoes are done, scoop out the flesh and set skins aside
Mix spices, vanilla extract, and heavy cream in a large bowl.
Add the potato flesh to a bowl
Mix thoroughly
Fill skins with the mixture
Place back in the oven for 5 minutes
Optional: top with small marshmallows
