My holiday sweet potatoes
Bring stock pot of water to a full boil, and preheat oven to 400°. Scrub sweet potatoes and place in stock pot. Cook at boil for approximately 15-20 minutes. Test by pricking a potato with a fork. Fork should insert easily into about a third of the potato. The center of the potato should still be firm. Remove from pot, bathe potatoes in cold water. Using knife slice longways just through skin, and you should be able to peel skin off the sweet potato. Slice the entire potato longways and place in a 9 x 12 glass pan. Cut sweet potatoes in large chunks if you prefer. Cover with slices of butter and the brown sugar. Place pan in oven for approximately 10 minutes, or until the butter is fully melted. Top with marshmallows and bake another five minutes until marshmallows are melted and slightly browned. Enjoy!
