Scald milk and set aside to cool slightly.
In mixing bowl, dissolve yeast in warm water.
Add milk, sugar, salt, egg, shortening and half of the flour.
Mix with a spoon until smooth.
Turn onto a lightly floured cloth covered board.
Knead until smooth and elastic, about 5 minutes.
Place in a greased bowl, coating all sides.
Cover, let rise in a warm place until double, about 1 to 1 1/2 hours.
Punch down and let rise again until almost double, about 30 minutes.
Shape into desired rolls or coffee cake.
Cover and let rise until double in size.
Bake as directed for each type of recipe below:
To make Rolls: Use dough to make pan rolls, cloverleaf, parker house or crescent shaped rolls. Bake at 400deg for 12-15 minutes.
To make Cinnamon Rolls: Roll 1/2 the dough into oblong 15"x9". Spread with 2 Tablespoon melted butter, sprinkle with cinnamon and brown sugar. Roll up tightly, beginning at wide side of dough. Seal well by pinching edge of roll together. Even up the roll by stretching slightly. Cut dough into 1" slices. Place in greased 13"x9" pan or 18 greased muffin cups. Cover, let rise until double, 35 - 45 minutes. Bake at 375 deg for 25 - 30 minutes. Frost while warm. Optional: 1 cup powdered sugar, 1 Tablespoon milk, 1/2 teaspoon vanilla. Whisk and drizzle or spread over cinnamon rolls.
To make Swedish Tea Ring: Make as cinnamon rolls above except sprinkle dough with 1/2 cup raisins in addition to the brown sugar and cinnamon. Roll up dough as for cinnamon rolls. Place sealed edge down, forming a ring on a lightly greased baking sheet. Pinch ends together. With Scissors, cut 2/3 of the way through the ring at 1" intervals. Turn each 1" section on its side, slightly. Let rise until double, 35 - 45 minutes. Bake at 375 deg 15 - 20 minutes. Frost while warm. Optional: Use icing recipe above for cinnamon rolls.
