we have made this recipe or variations of it in my household for years. It's quick and easy and by substituting a can of cranberry sauce for the sugar you'll get a serving of fruit too! Kids LOVE this. if you want a more authentic batter coated version like Chinese take out just toss the chicken in flour with baking powder and fry in oil before adding to the sauce. you can also throw the ingredients in the slow cooker, just add an extra 1/4 cup of water to the sauce mix and slow cook form4 hours.
Cut chicken or pork into small 1 inch cubes, toss in bag with flour mixture (flour, salt & pepper) until lightly coated. Add chicken to med/high saucepan with about 1 TBsp, butter or oil. Cook until browned drain fat and set aside.
In a small/medium pot add the rest of the ingredients and stir with a whisk until combined. Cook on med/high heat until mixture starts to boil lightly then turn down to med/low and allow to simmer for as least 15 minutes. the longer type cook the more the vinegary taste will cook off. Taste after 15 minutes stirring every so often and if it is to your taste add chick and continue to simmer for about 5 minutes. the flour from the chicken will thicken the sauce.
Note: allow the sauce to simmer for as long as it takes for the flavours to meld together. if it taste too vinegary for your taste continue to simmer, and add a small amount of soy sauce or ketchup to flavour to your taste.
Serve over rice, I often add julienne carrots and pineapple tidbits or broccoli for a full meal. if you like ginger, you can also add about a half teaspoon of ground ginger or to taste or about two tablespoons of pineapple juice. Delish!
I often make the sauce in the crock pot as the longer the ingredients cook together the better it tastes. Also great for crockpot meal in a bag and DIY frozen meals.
