In a bowl, whisk together flour, garlic powder & ginger. Add chicken & toss to coat.
Heat coconut oil in a skillet, add chicken and cook over medium heat, stirring occasionally, until no longer pink. Season chicken with salt & pepper and move to a plate.
Add bell pepper & broccoli to skillet and cook, stirring occasionally, for 2-3 minutes. Stir in pineapple, with juice, broth, coconut sugar, vinegar.
Increase heat & bring sauce to simmer. When sauce begins to reduce, stir in arrowroot mixture. Add chicken to sauce & simmer another 5 minutes.
