Start with a large stock pot.
Cut Tenderloin into chunks and fry up in a little oil to quickly brown.
Add chicken stock and crushed pineapple to browned tenderloin. Simmer 1/2 hr.
Add chopped onion, chopped green pepper, chunked pineapple, rice vinegar, sugar and soy sauce. Simmer 1/2 hr.
Add salt as needed to taste.
Make cornstarch slurry with water and cornstarch and slowly add slurry to pot while stiring until thickened.
If re-heating later, do not thicken as much and leave on the looser side.
