1) Season the pork with salt, Cooking Sherry, one egg yolk; mix together well. Add 2 tbl. cornstarch; mix together well. The pork should not be too dry at this point.
2) Dip the meat into the breadcrumbs and coat as heavily as possible.
3) In a skillet, heat oil until very hot, then lower heat and add a handful of breaded pork. Cooking in batches, deep fry the pork until golden brown, then set the meat aside in a separate dish.
4) In a bowl, make the sweet and sour sauce. Pour the sauce into the hot skillet and bring to a boil. When it boils, add the bell pepper and pineapple, then the cornstarch to thicken the sauce. Turn off the head and pour the sauce over the cooked pork, and stir to coat. Serve immediately with rice or noodles.
