Preheat oven to 375.
Strain the zucchini with a chees cloth or strainer bag.
Mix together zucchini, carrots, salt, and eggs in a large bowl and then set aside.
Grease 9x13 baking dish with butter and pour egg mixture into pan. For a swirled effect, use fork to create a circular pattern before baking.
Bake for approx. 45 minutes or until edges are brown. The quiche will puff up while baking and then deflate when removed from oven.
