Easy weekend dish for breakfast or brunch
Remove stems from chard and chop. Sauté stems 10 minutes on high; then add chopped leaves and remove from heat. Allow to cool.
Mix 2 eggs with flour and seasoning. Place into small pie plate or casserole dish which has been sprayed with Pam, spread up the sides of the pan. Bake at 425 F for 8 minutes.
Mix 4 eggs with sliced goat cheese and onion powder. Fold in cooled chard. Place on top of crust and bake for 30 minutes at 350 F. Allow to set at room temp for 10 minutes.
Serve with coffee for breakfast or wine for dinner.
Serve sliced or cherry tomatoes on the side.
Makes a perfect bistro dinner for two with a glass of wine.
