Round steak, the root veggie trifecta (carrots, celery, and onion), tomatoes, and a little garlic. Serve over white rice. Delicious!
Take 1 1/2 to 2 lbs. round steak, cut into medallions, season with salt and pepper to taste. Sear in frying pan until both sides of each medallion are browned. Place round steak medallions into a large glass baking dish. Place celery, carrots, onion, garlic, mushrooms, and tomatoes (undrained) on top of, and around, round steak. Drizzle 2 T. soy sauce and 2 T. worcestershire (you can use more or less, according to your taste) over veggies and round steak. Bake uncovered in 350 degree oven for 1 to 1 1/2 hours. Cooking time will vary according to your oven. Check after approx. 45 minutes, and if dry, you can add a little water to the baking dish. If veggies start to brown, you can cover with aluminum foil. Cook rice according to pkg directions. Serve steak and veggies over white rice. This was a recipe my Mom always made when I was growing up, it's such a comfort food for me. Now my husband insists I make it for him. Hope you enjoy!
Just don't let the water completely evaporate from the baking dish. You want those juices from the steak and veggies to simmer!
