In large bowl, combine soup, sour cream, pepper, stir in vegetables, 1 cup cheese and finely chopped onion. Spoon in to a 3 quart oblong baking dish and cover. Bake @ 350 for 40 minutes or until vegetables are at desired tenderness. Uncover and sprinkle remaining cheese and French Fried Onions. Bake 5 minutes longer.
Don't overcook the veggies or it won't be as good.
