Preheat oven to 400.
Heat skillet on high.
Season fish with salt and pepper, and brown quickly on all sides in the oil.
Place fish in a buttered, shallow baking dish.
In a bowl, mix the rest of ingredients together and top fish with mixture.
Bake for 10-15 minutes or until fish flakes easily when tested with a fork.
Serve with lots of topping!
