A light pudding cake without any fat for any occasion. Especially refreshing after meat and all fancy dinners.
First prepare the syrup by mixing 4 cups of sugar with 5 cups of water bring to boil and boil over low heat for about 10 minutes then pour 2 tbsp of fresh lemon juice boil for 5 more minutes and put aside to cool.
For the cake, mix eggs and sugar with a blender for 8-10 minutes high speed until white and fluffy. Add yogurt and continue to blend on low speed, add lemon zest, baking powder and last sifted flour slowly incorporating evenly using a hand held blender.
Pour this in a 12*9 inch or 28*22 cm glass baking dish (do NOT butter, spray oil or put baking paper)
The batter will flatten out in the dish and will seem too little (only about 1 inch or so thick) but don't worry it will be perfect!
Put in preheated 150 C or 300 F oven and bake for 35 mins until golden all around. It will not rise much.
When out of oven wait for 3-4 mins and with a knife make 3-4 horizontal and 3-4 diagonal cuts then pour the warm syrup on top slowly. You can keep about a cup and a half of syrup to use later on individual servings. Or pour it all if you like very syrupy.
Let cool completely then keep in the fridge. Perfect cold with whipped cream or vanilla ice cream
