1) Preheat oven to 425 degrees.
2) Scrub potatoes, then cube uniformly, and drop into a medium-sized bowl.
3) Add a drizzle of olive oil, 3 dashes of Cajun seasoning, and 3 dashes of cumin to cubed potatoes. Combine well.
4) Prepare a small cookie sheet with cooking spray. Dump potato cubes onto cookie sheet and spread into a flat, even layer. When the oven comes to temperature, bake for 30-35 minutes, until fork tender.
5) Rinse out the potato bowl, then add diced tomatoes, diced jalapeno, diced red onion, and minced cilantro into bowl, and mix well to combine. Squeeze a wedge of lime over the pico mixture, add a little salt and pepper to taste, stir to combine. Taste to make sure it is not too hot, and if it is good, set aside, otherwise adjust the seasonings to your tastes.
6) Brown the hamburger and sausage in a medium-sized skillet. When browned, add tomato paste, 3 dashes of Cajun seasoning, 3 dashes of cumin, and the water. Stir well to combine, then let cook until the water is completely evaporated.
7) In an individual serving bowl, add a layer of the roasted potatoes, and top with a few spoons of the hamburger mixture. Spread on a couple of spoonful's of the pico mixture, and a dollop of guacamole on the top. Serve immediately.
