Two great meals combined into one!
Preheat oven to 350°F.
In a large skillet, brown the ground beef, garlic and onion. Add the water, taco seasoning and salsa. Bring to a boil. Stir in the black beans. Simmer on medium-low heat for 5 minutes, stirring occasionally. Remove from heat.
Combine the egg and cottage cheese in a small bowl.
Spread 1C of the meat mixture into the bottom of a 9x13 baking pan. Layer 1/3 of EACH of the following: noodles, cottage cheese mixture, meat mixture, shredded cheese. Repeat two more times. Ensure the final layer of noodles has sauce on all of them. Cover with tin foil and bake for 45 minutes. Remove the tin foil and bake for another 10 minutes. Remove from oven and let rest for 10 minutes before slicing and serving.
Serve topped with the romaine lettuce, tomato and sour cream.
