1. Brown ground beef and onion.
2. Mix all ingredients in a large pot and simmer 1 hour or all day.
If you like it hot, use the hot Ro Tell tomatoes and closer to 3 tablespoons of taco seasoning. I like to add some Frito Corn Chips to my bowl before spooning in the soup.
Set the pot in the fridge to cool over night. Spoon into quart Zip-Lock bags and freeze for a quick meal.
