This is Brian's favorite soup - hearty and filling, with plenty of spice.
Brown ground beef and drain. Add onions and saute briefly. Add all remaining ingredients and bring to a boil. Reduce heat, cover, and simmer for 30 minute. Serve over cooked rice and topped with grated cheese and chopped onions, if desired.
Notes: This recipe came from Turnpike friend Carol Gillen and we make it all the time. I generally cook ground beef in big batches and freeze in baggies, so I usually make this in the crock pot (large one!) - just combine the cooked meat and remaining ingredients and cook on low for several hours.
