Brown meat with onion until onion is transparent and meat is nearly cooked through. Add potato, tomatoes, sugar, chili powder, coriander, and salt and stir to blend. Cook a few more minutes. Heat the tortillas to soften them, and place some of the meat on each tortilla, spread it out, roll the tortillas. Serve with lettuce and tomatoes and grated cheese. Serves 12
