Suggest a better description1 Place the butter, orange rind and 2 tbsp caster sugar in a large frying pan, squeeze in the orange juice and heat gently, stirring occasionally until the sugar dissolves. 2 Place the pancakes on top of each other and roll up. Cut into 1cm wide strips and add to the pan. Stir together to warm through, then push to the side of the pan and increase the heat. 3 Sprinkle the remaining sugar onto the space in the pan and when the sugar begins to melt and bubble, pour over the brandy are carefully ignite. 4 Let the flames subside and divide between plates. Drizzle over cream, decorate with sugar and mint and serve. TIPS: Make your own pancakes or classic crepes Suzette.
