Toast Sesame Seeds (optional)
1. add sesame seeds to side saucepan over medium-low heat and toast
2. stir constantly until the seeds become fragrant and very lightly colored (3-5min.)
3. Transfer seeds to baking sheet and cool completely
Make Tahini
1. Add sesame seeds to a food processor and process until crumbly paste forms (1 min.)
2. Add 3 Tablespoons of oil then process 2-3 min. more (stop to scrape bottom and sides of food processor)
3. check tahini consistency. it should be smooth, not gritty and should be pour-able
4. If needed add oil for right consistency
5. add salt to tast
6. Process 5-10 seconds more
Store Tahini
1. Store covered in refrigerator for 1 month, may separate over time, stir if needed
