Delicious and hearty casserole with hamburger, pepper, corn, tomatoes. The best part is the tamale topping!
by Brendan and Christina Hannigan
Brown hamburger and onion, drain and move to large sauce pan. Add tomatoes, sauce, corn, green pepper and seasonings and cook for about 20 minutes (I had it on medium heat), stirring regularly. Pour into well greased 8 x 12 inch baking dish or large casserole.
For Topping:
Mix the milk, cornmeal, butter and salt (I did this in the pan i browned the meat in on low heat; cook until thick (this only takes like 5 minutes so you don't have to start this until your innards are almost done cooking for their 20 minutes). Add the eggs and cheese; mix well and pour over meat mixture. Bake until top is browned at 350 degrees, about 45 minutes to 1 hour. (do not go longer than 45 minutes, the topping will start to burn)
You can substitute the hamburger for rotisserie chicken. Also, you can add paprika and other seasonings to taste.
