Brown ground beef with onion. Drain. In a bowl, combine cornbread mix, corn, and eggs. Mix well. Pour half of mixture into a 10" greased pie plate. Spoon on grounded beef, chiles, and 1 cup of cheese. Then pour the rest of the egg mixture on top. Cover with remaining cheese. Bake @ 350 degrees for 40 to 50 minutes. Serve with sour cream and salsa, if desired.
