Suggest a better descriptionCut off stem of endive, wash leaves and set on towel to dry. Cream the butter in small bowl with electric mixer.
Slowly add evoo to the butter, & continue to beat on hi til oil is incorp & emulsified.
Add the lemon juice & beat til well incorp. Peel the garlic clove with garlic press squeeze into the butter mixture. Mix well. Add s&p. Taste & adjust seasonings as needed.
Put this into a plastic sandwich bag, seal & refrig while prepping the salmon.
Cut the smoked salmon into 1/4" pieces.
Lay the dry endive leaves on serving platter & fill the bottom of each with the smoked salmon pieces.
Remove butter mixture from refrig, snot off a tiny piece of the corner of the plastic bag & drizzle the mixture over the salmon in each leaf. Then top each one with chopped chives.
Can be prepared ahead, covered with plastic wrap and refrigerated til ready to serve.
