Bite sized Spanish inspired starter
Heat the oil in a frying pan and gently sweat the onion, garlic and half the basil.
Meanwhile, soak the bread in a bowl of water, then remove and squeeze out excess water.
Place in a bowl with the beef and remaining basil and mix well.
Shape into small balls and poke a piece of goats cheese into the centre of each.
Add the tomatoes, tomato purée and sugar to the onion and garlic mixture and bring to the boil.
Season to taste with the salt, and add the meatballs.
Cover and simmer for 40 minutes, turning once.
