I always get rave reviews when I make these. Great dish to entertainment with.
Prepare package of cajun rice according to directions and set aside. Brown ground beef and add taco seasoning. Mix beef mixture and rice mixture together. Place 1/2 c of beef and rice mixture in tortilla shell and place in baking dish. Continue until the meat mixture is gone. Pour enchilada sauce over the top of the enchiladas and sprinkle cheese on top of all. Cover dish and bake in 350? for about 30-45 minutes. Can serve with sour cream, black olives and chopped tomatoes on top.
