My favorite way to make lentils!
Turn heat on to about medium, medium high. Add your oil, wait for it to heat up, and then add onion. Sauté on this higher heat until onions release moisture, then turn heat down to low. You want it to still cook, but not to have to watch it like a hawk. Stir every couple of minutes so it doesn’t burn. You want a nice brown, caramelized look.
While you’re waiting on the onions, get your BtB and spices into a container. A Pyrex measuring cup is great. Add your hot water, mix it all up. Pour a small amount of it on the onions to deglaze them.
Dump all the water in. Turn the heat on to medium again.
Add in your lentils.
Cover. You don’t really need to worry about checking it so often. I like some of them to disintegrate a bit, so I leave it on longer. You’re the best judge of how you like it.
