awesome light and airy batter. the key is to not over mix and make in two separate batches.
make the batch using half the ingredients (do not over mix the egg, flour should still be clinging to the side of the bowl and little clumps of flour still floating). dip the food in the other half of dry ap flour and then into the under-mixed batter, then into hot veg oil. Once the batter has been used make another batch using the other half of the ingredients.
