To make batter mix flours and water to make a runny batter. Put ice cubes in the water to make it cold.
Fry in a pan of hot oil. When a drop goes half way down and then back up, it is the right temperature. If batter spreads apart it is too thick and if it stays it is too thin, should look like a donut.
After frying put on newspaper topped with kitchen paper.
To make the sauce, put water soy sauce and Mirin in pan and add dried bonito flakes. Medium to low heat until the temperate becomes 80 degrees. Then drain and serve. Can add grated ginger into sauce.
