I've been making this for years.
Cut meat into 1/8 inch slices and place in a slow cooker. In a small bowl, combine soysauce, reserved pineapple juice, ginger root, sugar, oil and garlic. Pour sauce mixture over meat. Cover and cook on low 6 to7 hours. Turn control tohigh. Stir in pineapple. Combine cornstarchandwater in a small bowl; add to cooker.
Cook stirring until slightly thickened. Serve over rice.
If you pressure cook make sure there is enough liquid in pot.
