A twist on traditional meatloaf, without any tomato.

Preheat oven to 350F
Heat olive oil in pan, add carrots, celery, peppers, onions, shallot, and garlic and cook until translucent and developing some colour.
Add parsley, thyme, and rosemary, cook until you can smell the aroma of the seasonings.
Add plum wine to deglaze the pan and reduce to approx. half, then add cubed bread and let cook a few minutes, stirring frequently.
Add stock and cook until completely absorbed and bread begins to fall apart. Remove from heat and allow to cool enough to be able to handle with your hands.
In a bowl mix ground turkey, salt and pepper, egg and bread mixture. The best way to do this is to knead with your hands to ensure all ingredients are well combined.
Grease a 2 lb loaf pan and fill with the turkey mixture and cover with foil and seal tightly. Place loaf pan in a larger pan and place in oven fill outer pan with boiling water 2/3rds of the way up the side of the loaf pan. Cook 20 mins with the foil on and the remove the pans from the oven and uncover loaf pan and cook for a further 20 mins.
