This is a quick fix, low cost recipe for those times your schedule creates a need for a fast dinner, very simple to make with surprisingly great taste.
Preheat oven to 350 degrees.
Brown the hamburger ***DO NOT DRAIN***. When hamburger is browned, combine it, both bags of rice (open the bags and pour the rice in), and salsa in a 2 quart casserole or baking dish with a lid. Cover and bake for 40 minutes checking every 15 minutes to make sure that casserole is moist, add more salsa or water if needed in moderation.
After 40 minutes remove from the oven, remove cover and evenly add cheese on top of the casserole. Place back in the oven, uncovered for 5 minutes untill the cheese has melted and starts to bubble. Remove from oven and let set for 5 more minutes,
Serve and enjoy, this will feed 4 people easy.
Oh.... and don't forget to turn off the oven when your done
you can pretty this up just by sprinkling some chopped green onions and roma tomato on the casserole topped with a dollop of sour cream and a sprinkle of chopped cilantro over all.
